Smothered Pork Chops ~ Gluten Free

This creamy pork chop recipe takes a bit of time, but your taste-buds will be glad for it! Pair with Gluten Free pasta or rice.


Ingredients

  • 1 cup GF flour (I use Bob's Red Mill all purpose flour)
  • 1-2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 pork chops, bone-in or boneless (3/4-inch thick)
  • 3-5 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 1/2 cup buttermilk
  • 2 Tbsp cream cheese, softened
  • Fresh parsley, chopped (optional)


Instructions


Mix first 5 ingredients in a shallow dish. Wash then pat your pork chops dry with paper towels. Heat large skillet over med heat and coat with oil. When oil is hot, dredge the chops in flour mixture and lay in the pan in a single layer. Cook for 4 minutes on each side until golden brown. Remove the chops. Sprinkle some of the flour mixture and garlic into the pan drippings, stir and add chicken broth. Allow to cook down and thicken slightly (about 5 min). Stir in buttermilk and cream cheese. Stir until cream cheese has melted. Return chops to pan, cover with sauce and simmer 5 min or until pork is cooked through. Season as desired with salt and pepper. Garnish with parsley.
