Dutch Apple Pie ~ Gluten Free

RECIPE:

This recipe has been a favorite for years as I learned it from my mom … then altered it to make it gluten free. The apples are tender the topping is crunchy and it wonderful to replace your normal apple pie.


INGREDIENTS:

Topping:

  • 1 cup Bob's Redmill 1:1 flour (at most grocery stores but great price at Sam's Club!)
  • 1 cup brown sugar
  • 1 stick butter, softened
  • 1/2 teaspoon cinnamon


Filling:

  • Apples
  • 3/4 cup sugar
  • 1/4 cup Bob's Redmill 1:1 flour
  • 2 teaspoons cinnamon


INSTRUCTIONS:

Peel, core and slice apples. I use a bunch of them because I LOVE lots of apples in my pie-usually about 10 large Granny Smith or Haralson apples. I've added this step because I don't like a lot of crunch in my apples-so after they are sliced I put them in a large microwave-safe bowl, I mix the filling together, toss the apples then cover with plastic wrap. Microwave for 8 minutes (stirring one time half way through). Be careful when you lift the plastic wrap as the steam is HOT! Then I let these apples cool in the frig or outside while I prepare the crust and topping. Make your favorite GF single pie crust - or visit our website where I have added a GF pie crust. Line a pie pan with the pastry. In a new bowl, mix the Topping ingredients with a pastry blender or by hand. Pour cooled apples into pastry crust then cover with the Topping mixture. Bake in a preheated oven @ 350-degrees for 1 hour.
