Chocolate Cookie Dough Truffles ~ Gluten Free

Who doesn't like a bite of cookie dough? Now, if that was dipped in chocolate, wouldn't it be even better? That's what you'll get when you make these! Make them for your family or make for friends or loved ones as Christmas or Valentines treats!
Ingredients
- 1/2 cup butter, softened
- 3/4 cup packed brown sugar
- 2 cups gluten free flour (I use Bob’s Red Mill 1:1)
- 1 14-ounce can sweetened condensed milk
- 1 teaspoon vanilla
- 1/2 cup miniature semisweet chocolate chips
- 1/2 cup chopped pecans, optional
- 1 1/2 pounds light chocolate candy coating
Instructions
In a mixing bowl, cream the butter and brown sugar until light and fluffy. Add the flour, milk & vanilla; mix well. Stir in the chocolate chips and nuts. Shape into 1-inch balls and place on wax paper-lined baking sheets. Loosely cover and refrigerate for 1-2 hours or until firm.
In a microwave-safe bowl, melt the candy coating, stirring often until smooth. Dip balls in coating; place on freshly wax paper-lined baking sheets. Refrigerate until firm, about 15 minutes. If desired, remelt remaining candy coating and drizzle over the truffles in a criss-cross pattern. Store in refrigerator until sharing. Makes 5 dozen.
