Black Bean Brownies ~ Gluten Free

No matter if you are gluten free or if you just love brownies, this recipe is for you! Because they are rich in flavor, pairing with a scoop of vanilla ice cream or frozen yogurt is always wonderful. You'll be singing after you try this recipe, but hopefully not being singing:


Beans, beans, the magical fruit
The more you eat, the more you toot,
The more you toot, the better you feel
So let's have beans (brownies) for every meal!


Ingredients

  • 1 (15 oz) can black beans, rinsed
  • 1 pinch salt
  • 1 egg + 2 egg whites
  • 2 teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • ¾ cup white sugar
  • ¼ cup cocoa powder
  • 2 teaspoon instant coffee
  • 1 teaspoon baking powder
  • ½ cup milk chocolate chips


Instructions


Preheat oven to 350-degrees. Lightly grease a 8x8 inch square baking dish. Combine all ingredients except chocolate chips in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle with chocolate chips. Bake until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
