Best Peanut Butter Cookies ~ Gluten Free

Even if you do not eat Gluten Free, these are hands-down the best Peanut Butter Cookies EVER! They last less than a day at our house! These are great with a cup of coffee, cocoa or cold glass of milk!
Ingredients
- 1 egg
- 1 cup sugar
- 1 cup peanut butter
- 1 tsp baking soda
- Sugar for criss-crossing
Instructions
Preheat oven to 350-degrees. Combine ingredients and mix until smooth. Spoon dough into palm of hand and roll slightly into a ball. Put dough balls onto a cookie sheet lined with parchment paper. Dip a fork in sugar and make criss-crosses on the top of each cookie. Bake for 7 minutes or just until starting to brown on bottoms. Do not over-bake.
