Best Ever Banana Bread ~ Gluten Free

This gluten free banana bread is better than making it with gluten-filled flour!
Ingredients
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 2 ripe bananas, mashed
- 2 cups GF flour (I used Bob's Red Mill 1:1)
- 1 teaspoon baking soda
- Pinch salt
- 1 teaspoon vanilla
Instructions
Combine butter and sugar; cream until light and fluffy. Add eggs and bananas; mix well. Combine dry ingredients, stir into banana mixture just until all ingredients are moistened. Stir in vanilla (and 1 cup walnuts or pecans if desired). Spoon batter into a greased 9” by 5” by 3” loaf pan. Bake at 250-degrees for 1 ½ hours or until bread tests done. The secret is the slow but long cook time ~ This bread is so moist and delicious you don't even have to put butter on it!
