Apple Cake ~ Gluten Free

Recipe
This is Aunt Pat's recipe, tweaked to be GF! It's a party for your tastebuds in the fall ... or all year round!
Ingredients
Cake batter
- 2 cups gluten free flour ( Cup 4 Cup or Bob's Red Mill)
- 2 tsp salt
- 1 1⁄2 tsp baking soda
- 3 tsp cinnamon
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1⁄2 cup water
- 4-5 cups diced pealed apples
Frosting
- 3 Tbsp butter
- 1⁄2 cup brown sugar
- 1 egg, beaten
- 8 oz container of Cool Whip
Instructions
Cake
Preheat oven to 350 degrees. Mix first 4 ingredients together in a bowl and set aside. Beat sugars and eggs together until creamy. Add vanilla and water, then slowly add the flour mixture (it will be thick). Stir in apples. Spray 9x13 baking pan with non-stick GF baking spray. Pour cake batter into pan; bake for 45 minutes or till toothpick inserted comes out clean. Remove from oven and let cool.
Frosting
Melt butter and brown sugar in saucepan. Beat egg in separate bowl and slowly add some of the melted mixture until blended. Add new egg mixture to the saucepan. Stir to blend, cook for 1 minute, until slightly thickened. Set aside to cool. When cool blend Cool Whip into the sugar mixture. Spread over cooled cake. Refrigerate cake for at least 2 hours.
